Tomato coulis

This tomato coulis is an ideal accompaniment to any terrine or dish which requires a little sauce for the finishing touch.  All you need do is blitz in a blender and hey presto!  Add 1 clove of garlic if you are a garlic lover – gives it that extra zing!


3 ripe vine tomatoes, chopped
3-4 sun dried tomatoes in oil, drain the oil
Some fresh basil or 1 teaspoon dried basil
2 tablespoons olive oil
Dash of Worcester sauce, Biona do a good one (optional)
Dash of any hot sauce
Salt and pepper


  1. Blend all the ingredients in blender
  2. Keep refrigerated
